Mỗi người có định nghĩa về niềm vui và hạnh phúc của riêng mình. Với chúng tôi, hạnh phúc là một buổi sáng tháng 3 nắng vàng, được khoác lên mình chiếc tạp dề quen thuộc, lê chân vào căn bếp nhỏ và đắm chìm với niềm vui làm bánh. Để khi bánh chín, bạn lại cùng quây quần bên những người thân yêu, trong buổi trà xế chiều, huyên thiên về cuộc sống, cùng đọc một hai chương sách, radio thì thầm lời ca cô Norah Jones: “but if you don’t try, the light won’t hit your eye…”. Từng miếng bánh cứ vơi dần trong cuộc chuyện trò, và thời gian cứ thế trôi đi, nhẹ nhàng như chiếc hôn khẽ  Jeremy dành cho Elizaberth trong My Blueberry Nights. Hạnh phúc đôi khi xuất phát từ chính những điều đơn giản.

Happiness is defined distinctively based on people’s points of view. In our imagination, it is like a shiny Saturday morning when you put on the apron, step into the familiar kitchen and then, wholeheartedly bake your most tasty cake. The treat is ready, you enjoy the tea break with your fellows, chat or read a book together whilst listening to the soothing Norah Jones’ vocal: “but if you don’t try, the light won’t hit your eye…”. Every slice of cake gradually eaten with the great relish, gently as a kiss that Jeremy gives Elizaberth in My Blueberry Nights. Happiness takes simplicity once in a while.

MARCH RECIPE – BLUEBERRY CHEESECAKE by Truong Nguyen

INGREDIENTS

Serves 8 to 10
Crust
6 tablespoons melted butter
1 1/4 cups biscuit crumbs
Filling
3 eggs
500 gr cream cheese
2/3 cup sugar
1 teaspoon vanilla extract
2 tablespoons plain flour
Warm lemon blueberries
Blueberries (as many as you love)
1 lemon, juiced
Brown sugar (depends on individual preference)

DIRECTIONS

For the crust
Break the biscuits into crumbs, mix with melted butter. Pour the mixture into a baking tin, use a spoon to spread and press the mixture into a 1 cm – base, then chill in the refrigerator. While chilling, pre heat the oven to 160 degree Celsius.
For the filling
In a mixing bowl, beat cream cheese untill smooth. Add sugar and vanilla extract and continue to beat until combined. Beat in the flour and eggs, one at a time. Do not beat too much, just until everything comes together, then pour the mixture into the crust-lined baking tin. Bake in oven for about 45 to 50 minutes, then leave the oven door slightly open to let the cake cool down inside. After completely chill, transfer to the refrigerator.
For the sauce
In a saucepan, add all the ingredients and simmer over medium heat until the blueberries begin to break down slightly. Cool down before spreading on cheesecake.
